Aibika Dolmades Recipe
Ingredients:
- 15-20 fresh Aibika leaves
- 3 tablespoons olive oil
- 1 large onion, finely chopped
- 1/2 cup (100g) brown rice, rinsed and drained

- 2 tablespoons pine nuts
- 2 tablespoons currants
- 2 tablespoons finely chopped flat-leaf parsley
- 1½ tablespoons finely chopped mint
- ½ teaspoon fine sea salt
- freshly ground black pepper
- ¾ cup water
- 1 cup water, extra
- juice of 1 large lemon
- 3 tablespoons olive oil, extra
- lemon wedges, to serve
Method:
Trim the stalks off the Aibika leaves, then blanch in boiling water for 3 minutes. Drain and rinse.
Heat olive oil in a fry pan over medium heat and cook the onion gently until soft and lightly golden, then add the rice. Cook for 1-2 minutes, stirring then add the pine nuts, currants, parsley, mint, salt and pepper to taste. Mix in the 3/4 cup water, then cover with a lid and cook very gently for about 12 minutes until all the water is absorbed and the rice is nearly tender.
Place the leaves smooth-side-down on a clean bench, a few at a time. Put a teaspoon of filling in the middle of each leaf. Fold the stem end up, followed by the sides, then roll up tightly to form a log shape.
Use any torn leaves to line the base of a small, heavy-based frying pan (with a lid), then put the dolmades in the pan, in one layer, seam-side down. Pack them as close as possible to prevent them from unfolding during cooking. Cover the top with more leaves. Combine 1 cup of water and lemon juice with the remaining olive oil and pour over dolmades. Place a small plate over the top of them, to hold them in place; then top with the lid. Bring to a gentle boil, then reduce to a very low simmer and cook for 45 – 60 minutes, or until they are very tender.
Remove from the heat and let sit, without taking the lid off until cool. When cool, transfer to a container, cover and chill until serving time. Serve with extra lemon, to squeeze over.
Note:
A drizzle of Lemongrass Balsamic can be stirred through the cooled mixture prior to filling each leaf.

This will be a fabulous and enlightening morning. Come and be immersed in our native wildlife with Dr Les Hall and Terri Ridgeway from Bat Rescue.
Les will start the morning talking about the lives of Echidnas, Bandicoots, Brush Turkeys and Flying-foxes and how they interact with humans. Terri Ridgeway will then give a talk on how to rescue and handle Flying-foxes and other wildlife (with a live Flying-fox). The last part of the morning will be another talk by Les on the amazing world of bats, including a section on Flying-fox management.

Dr Les Hall retired to Maleny in 2001 after a career with the CSIRO, Division of Wildlife Research, and The University of Queensland. Although Les has a strong interest in birds, mammals and wildlife, in general, he is especially passionate about bats. Educating people about the important role bats play in our environment and dispelling misconceptions surrounding bats have been major aspects of his professional career. He has authored numerous scientific papers and books about Australian wildlife. His latest books include The Natural History of Australian Bats – Working the Night Shift and A Field Guide to Australian Mammals.

Monday, 29 October 2018, 6 pm – 8 pm Making your own wax cloth wraps
Join our presenters from the ‘Giving Plastic The Flick’ group for a hands-on workshop making your own wax wraps. These workshops are a great place to meet new friends and discover just how easy it is to make re-usable wax wraps in your own home. You will learn about various methods, what materials you need and where to source products. We aim to make 4-5 wraps of varying sizes on the day.
Please bring
Pieces of fine cotton material. Some suggested sizes are: Small ( 12x 12 cm), Medium ( 23 x 23 cm), Large ( 33×33 cm). You may have some at home, or check out Op Shops as they often stock a variety of good material. It must be COTTON, not polycotton. If you are buying from your local fabric supplier, consider 100% cotton Lawn or light sheeting material. You will need to wash and dry your material prior to the workshop. Some material will be available on the day for a donation. We will have templates to cut if you have larger pieces of material. Bring along Pinking Sheers if you have them.
Herbal teas made from our garden will be available.
Places are limited and bookings essential. These workshops are all weather events (rain or shine).

Important: Please wear clothes that can be paint & dirt stained… aprons & covers are helpful.
Bring seeds, pods, leaves, and vines.
Activities suitable for children aged 5-10, however, we will have activities for younger children too. A parent/carer needs to accompany the child/children.
